The authors feel that chicken is often overcooked or undercooked, charred, dry, over-spiced or barbecue-sauced to death. Their recipes can transform your chicken from an inedible blob to a wonderful piece of meat, and your reputation from one whose invitations to dinner were feared to someone whose invitations are sought after. Read the introduction before starting on the first recipe. I repeat, read the introduction No Burned Birds is worth every minute of your time. Then move on to the recipes, from Golden Saffron Skewers to Tequila-Lime Chicken Tacos with Charred Limes (Wow), and on to Garlic-Rubbed Chicken with Chimichurri and Bourbon Chicken. Both Ranch Roasted Cornish Hens and Chutney and Mint Chicken Salad caught my eye.
