I keep buying tofu, and then wondering what to do with it, so this title - 101 Things To Do With Tofu - immediately caught my interest. I know it's a healthy food, but how to make it appealing to my carnivorous family, who tend to look on this pallid foodstuff with disdain?

Spiral-bound with a practical plastic cover, this small book is one of the 101 Things To Do With ... series of cookbooks, each focusing on one food type. It begins with a chapter of Helpful Hints that introduce tofu as 'a complete protein food source ... low in calories and saturated fat' that comes in four varieties - extra-firm, firm, soft, and silken. Recipes are organized under: Appetizers; Sauces, Dressings & Spreads; Soups & Salads; Breakfast; Kids' Favorites; Main Dishes; International Entrees; and Desserts (Rebirth by Chocolate anyone?)

Tofu has been incorporated into many familiar dishes, including Tofu Hummus, Alfredo Sauce, Ultimate Veggie Chili, Breakfast Burritos, Smoothies, and Tofu Stroganoff, as well as a variety of soups and salad dressings. I like the look of Any Fruit Quick Bread and Mix 'N' Match Muffins - both recipes can make a bunch of different tasty morning treats, by varying the fruits, nuts and spices. Have always loved quiche but avoided it since my husband developed cholesterol problems - the Tricolor Quiche here looks both tasty and healthy, as does a Sublime Spinach Lasagna and (yumm) World's Healthiest Brownies.
