I always thought breadmaking would take too much time, though I salivate even at the idea of fresh home-made breads. Recently I dug out a breadmaker I was given decades ago and found that I can make bread quickly and easily with it. Now, in Healthy Bread in Five Minutes a Day: 100 New Recipes Featuring Whole Grains, Fruits, Vegetables, and Gluten-Free Ingredients, authors Jeff Hertzberg, M.D., and Zoe Francois (who also wrote Artisan Bread in Five Minutes a Day) offer other ways to make amazing - and healthy - breads with minimal effort.

This cookbook opens with the same simple but appealing Secret the authors (a doctor and a pastry chef) shared in the previous volume - 'Mix enough dough for many loaves and store it in the refrigerator.' Now they offer recipes 'for making breads and even desserts part of a healthy diet.' Informative introductory sections cover a wide selection of Ingredients (from vital wheat gluten to beer and wine, Equipment, Tips and Techniques (e.g. on weight equivalents, dough moisture, and general problem solving) and The Master Recipe (including step-by-step photos and many variations).

Sections on specific breads cover: Whole Grain Breads; Breads with Hidden Fruits and Vegetables; Flatbreads and Pizza; Gluten-Free Breads and Pastries; and Enriched Breads and Pastries from Healthy Ingredients. Those on my must-bake list include 100% Whole Wheat Bread with Olive Oil, Red Wine and Cheese Bread, Avocado-Guacamole Bread (recommended served with Chili!), Red Beet Buns, Oatmeal Date Bread, and Aloo Paratha, but you'll have your own preferences. The center of the book is filled with enticing color photos, while shaded boxes throughout include tips like why eating crusts is good for you, and how to use saffron threads.

If you, like me, love both the aroma and taste of fresh-baked bread but want it healthy, fast and easy, then get hold of a copy of Healthy Bread in Five Minutes a Day and start mixing - I just might have to retire my breadmaker again.
